This culinary creation, known as 'shoemaker's chicken' or Chicken Scarpariello, is a delightful blend of tender chicken and flavorful Italian sausage immersed in a lively sweet-and-sour pan sauce. This classic Italian-American recipe achieves its distinctive zest from white wine vinegar and a unique kick from pickled Peppadew peppers, harmonizing with sautéed onions, fresh bell pepper, aromatic garlic, fragrant rosemary, and the rich drippings from the cooked meats.

Unlike some variations that include potatoes directly in the pan, this method suggests roasting fingerling potatoes separately. The use of bone-in, skin-on chicken thighs is crucial; they caramelize beautifully, remain succulent during the braising process, and significantly contribute to the depth of flavor in the sauce.

Transfer the chicken thighs to the plate with the sausages.

Utilizing the same skillet, cook the chopped onions, red bell pepper, and grated garlic over medium-high heat. Stir occasionally and scrape the bottom of the pan to release any flavorful browned bits. Continue cooking until the vegetables are tender and begin to caramelize, about 10–12 minutes. Pour in the dry white wine and cook, stirring frequently, until the alcohol scent dissipates and the liquid reduces, taking around 8 minutes. Add the chicken broth, drained pickled Peppadew peppers, white wine vinegar, and rosemary sprigs, bringing the mixture to a boil. Finally, nestle the seared chicken thighs into the onion mixture in the skillet. Transfer the skillet to the upper rack of the oven and roast for 10 minutes. Then, add the browned sausages back into the skillet, pushing them into the sauce, and continue roasting until the chicken is thoroughly cooked, reaching an internal temperature of 165°F (74°C) in the thickest part of the thigh, typically another 5–10 minutes.
